Prep

  1. Heat oil to 375°F. Set up drying rack or paper towels.
  2. In one bowl, mix the cornmeal, flour, 1 teaspoon salt, garlic powder, smoke paprika, and pepper.
  3. In second bowl, whisk together the egg, milk, and ½ teaspoon salt.
  4. Cut okra, season.

Cook

  1. Dust okra in cornmeal mixture, dip in egg mixture, then cornmeal mixture again.
  2. Fry 3-5 minutes in batches.

Finish

  1. Serve immediately or keep warm in a warming drawer or low temperature oven.
