Prep

  1. Caramelize Onions on medium-low heat, set aside
  2. Toast bun in same pan, set aside
  3. Mix Sauce together in a bowl, add to bun
  4. Add tomato and lettuce to bun, lightly salt
  5. Assemble Beef into 3 oz. of loosely packed balls while cold

Cook

  1. Heat skillet to smoking hot, 500°F, without oil
  2. Smash Beef into pan until at least ¼“ thick, salt and pepper
  3. After 45 seconds, flip and add cheese and Onions to each patty
  4. After 10 seconds, stack the patties and finish burger assembly
