Ingredients
Beef
- 6 oz. Ground Beef, 80% lean, 20% fat
Sauce
- 2 T Aïoli
- 1 T Ketchup, optional
- ¼ t Sweet Relish, optional
- ¼ t Smoked Paprika, optional
- TT Salt + Pepper
Toppings
- 2 slice Cheese, American
- 2 slice Tomato, heirloom ¼” rondelle
- 1-2 leaves Iceberg Lettuce, ⅛” fermière
- 1 ea. Brioche Burger Bun, split
Onions
- ½ ea. Sweet Onion, macédoine
- 2 T Butter
Instructions
Prep
- Caramelize Onions on medium-low heat, set aside
- Toast bun in same pan, set aside
- Mix Sauce together in a bowl, add to bun
- Add tomato and lettuce to bun, lightly salt
- Assemble Beef into 3 oz. of loosely packed balls while cold
Cook
- Heat skillet to smoking hot, 500°F, without oil
- Smash Beef into pan until at least ¼“ thick, salt and pepper
- After 45 seconds, flip and add cheese and Onions to each patty
- After 10 seconds, stack the patties and finish burger assembly
Finish
